Tasty Dinner


I am so excited about the dinner that I made last night, that I just have to post the recipe. A fellow TriBabe, Teri, posted a recipe for basil shrimp with feta and orzo. I've never had orzo before and I'm so glad I tried it. It was so tasty, I even took pictures.

BASIL SHRIMP WITH FETA AND ORZO

1 c uncooked orzo (rice-shaped pasta)
1 tsp olive oil
1 c diced tomato (I used cherry tomatoes cut in 1/2)
¾ c sliced green onions
1 c (4 oz) feta cheese
½ tsp grated lemon rind
1 Tbsp fresh lemon juice
¼ tsp salt
¼ tsp black pepper
¾ lb large shrimp
¼ c chopped fresh basil (I only had dried basil)

1. Preheat oven to 450 degrees.
2. Spray baking dish with cooking spray. (I cook this on the grill and use either double aluminum foil for the bottom or a disposable aluminum pie or cake pan.)
3. Cook the pasta in boiling water 5 minutes only, omitting any salt & fat; drain. Place the pasta in a large bowl. Stir in olive oil, tomato, onions, feta cheese, lemon rind, lemon juice, basil, salt & pepper. Toss together.
4. Arrange shrimp on orzo mixture.
5. Cover the dish with aluminum foil.
6. Bake at 450 degrees for 25 minutes (or until shrimp is done if you use uncooked shrimp).

Yield: 2 generous servings
(Chris and I easily polished this off with a side of grilled eggplant and some crusty bread. Mmmm!)

I cooked this on the grill and I think it took about 20 minutes, until the shrimp were pink.



I had a few eggplant casualities. Oops.

I'm always looking for creative cooking for the grill. Chicken and burgers get so old!
